After making my edamame humus I thought that there must be a more exciting way to use it than simply as a dip with pita chips. This little idea creeped into my head and turned out to be a real gem and a crowd pleaser. It was a great appetizer for a BBQ we went to and acted as a nice fresh bite next to our dear friend’s bacon wrapped corn dogs (which were amazing)! I see many variations of this recipe in my future!
Edamame Humus Roll Ups
Ingredients
8 10 or 12 inch flour tortillas
24 oz edamame humus
1 t cumin
1 t paprika
4 T Italian parsley, chopped
8 oz crumbled feta
8 oz chopped kalamata olives
Spread 3 oz of humus out on each tortilla. Sprinkle each one with 1/8 teasponn cumin and paprika and 1/2 teaspoon parsley. Add 1 ounce each of cheese and oilves, spreading evenly. Roll up the tortilla. Refrigerate for at least 1 hour. Remove from refrigerator and cut each roll into 1 inch pieces. Refrigerate until ready to serve.
